The origin of the coffee goes back during the 18th century when Dutch colonizers began establishing some cash crop plantations in Sumatra and Java. These colonizers deterred the natives of these islands to pick such coffee fruit for their own sake. Sooner, the natives realized that the luwaks or civets ate almost most of the coffee fruits.

The natives then began collecting the civets' dropping coffee seeds. They cleaned them, roasted, and then ground to make some coffee beverage. The reputation of these aromatic civet coffee then spread across the plantation owners and the Dutch began to love them.

Countless of studies have been conducted to investigate the process on how the stomach acids and enzyme of animals digest and ferment the beans. Food scientists claim that the endogenous digestive secretions of a civet that carry proteolytic enzymes pass through the beans.
